This quick and easy spaghetti squash bake is as delicious as it is versatile 🙂 The spaghetti squash melds with the gooey cheese and pasta sauce into a beautiful pasta dish that is both rich and comforting.
I know everyone is riding the cauliflower train right now, but I’m bringing spaghetti squash back! Yep, that’s right – replacing the noodles in our favorite baked pasta dish with spaghetti squash. I still can’t believe I hadn’t tried spaghetti squash until about a year ago. Have I been living under a rock?!? This stuff is legit. With the right recipe, you can’t even tell the difference between “regular” pasta and spaghetti squash. And this versatile vegetable works especially well in this saucy, cheesy recipe. The spaghetti squash noodles meld with the gooey cheese and pasta sauce and bake up beautifully. Add a little Italian sausage and you have yourself a meal. Even my husband, who considers himself a bit of a pasta connoisseur, raved about this Baked Spaghetti Squash recipe. And he went back for seconds! I’ll call that a win, folks 🙂
Another thing I love about this recipe is how quickly dinner comes together. This dinner takes a mere 20 minutes to prepare before going into your oven. An ideal dinner for a busy weeknight. Comforting, too. Just the thing you want to indulge in after a long day at work or home. (When you have young kids, sometimes those days at home are more trying than those at work, am I right???)
I also love how versatile this recipe is. We used spinach and Italian sausage in ours, but you could also try it with roasted chicken and sundried tomatoes or go meatless and use whatever vegetables you have on hand. I’m dreaming of a Mexican version with ground meat, black beans, and bell peppers and swapping out the pasta sauce for enchilada sauce and Mexican seasonings. Thinking up different ways to use ingredients I love is so much fun! I guess you could call me a food nerd, but it’s my passion.
