I know, I know. What on earth could be interesting or new about a fattoush salad? It’s the dressing. The fattoush salads at Greek or Mediterranean restaurants are so lovely. It’s not that they are using super secret ingredients – it’s all in the dressing. And this lime vinaigrette comes about as close to a Greek restaurant’s “secret sauce” as I’ve made yet. Prepared with just 5 ingredients (excluding salt & pepper) this is an easy dressing to throw together at the last minute. Adding the cinnamon and sumac are a must – it lends the dressing a bright, yet earthy flavor. And be sure to use a neutral tasting oil. I used my usual olive oil when I made this dressing the first time and it came out tasting weird. So I retried it again with a neutral flavored grapeseed oil and that worked perfectly!
This quick and easy fattoush salad is appealing to even the most picky palates. Even kids generally aren’t opposed to cucumbers, baby tomatoes with a tangy lime dressing. This salad is easy to throw together and travels well if you plan on taking it to a potluck or other type of gathering. Simply store the salad dressing in a separate container and toss it all together when you arrive. Top it with some juicy grilled chicken or throw in a can of chickpeas and you have yourself a meal!
