Nothing says “fresh” like this easy Greek salad with tahini dressing. The abundance of fresh herbs and veggies make it impossible not to feel virtuous when eating it.
I recently purchased Kathryne Taylor’s “Love Real Food” cookbook and am captivated by all of the beautiful pictures. Her food photography is mouth-watering. I literally want to take a bite out of every page. 🙂 When I received the cookbook in the mail, I went through it page by page, taking note of recipes that I wanted to try. One of the first recipes I had the opportunity to prepare was Kate’s Tahini sauce on page 116.
It was a summer evening, and we were having company over for an easy, no-fuss dinner. My slow cooker Greek chicken was on the menu, and I planned on serving it with a fresh salad and lavash bread. I knew I wanted to serve a dressing or a sauce alongside the meal that would compliment the crisp, brilliant flavors of both the salad and the chicken. Then, as I was paging through “Love Real Food”, I saw it. Fresh, bright Tahini sauce. It’s cool green color and light consistency reminded me of summertime. I knew that was the one.
I only recently started making my own salad dressings and have mastered Ranch and Caesar, and of course a basic vinaigrette, but I’ve never made a salad dressing with a Tahini base. It was different and interesting, and I was excited to try it! We eat a lot of salads in our house and it’s always good to have another salad dressing in my repertoire. And I knew it would pair beautifully with the parsley, cucumbers, tomatoes, olives and chickpeas in the Greek salad.
The Tahini dressing is chock full of fresh herbs like parsley and cilantro with a little touch of lemon juice to round out the flavors. The dressing is so bright and fresh, it is like eating vegetables straight out of your garden. When I first made the dressing it was a creamy consistency – ideal on top of a salad. But it thickened up after some time in the fridge – which was nice to spread on top of lavash for a sandwich. Kind of a two for one – dressing and a sandwich spread. Yummy and delicious! My family loved this dressing as did our guests. This Tahini salad dressing is definitely making it’s way into our dinner rotation!
