My all time favorite dessert is apple crisp. Wait – this is a post about peach crisp, right??? Yes, you are reading the correct post. You see, I had never intended to develop this recipe. But. . . . we went peach picking with the kids on vacation this summer, and they got a little over zealous with their picking :). After eating peaches twice a day for a few days, we still had TONS of them left. They were so juicy and so sweet, I hated to see them go to waste. So, I decided to riff my all time favorite apple crisp recipe and use peaches instead.
The kids were excited to see the peaches that they had picked from the trees with their own little hands being transformed into a yummy dessert. And they loved helping me mix the filling together and crumble the crispy topping with their little fingers. I was pretty thrilled that our peach picking adventure yielded not one, but two fun activities for the kids and I.
If you are able to find them, use just-ripe peaches for this crisp. Even a little over-ripe will do. As the crisp bakes, the juice from the peaches melds beautifully with the cinnamon and brown sugar to create just the right amount of syrupy sweetness. Then there’s the crispy oatmeal topping. Don’t even get me started on how scrumptious it is. My kids call it the oatmeal cookie topping – a pretty good description in my book. Thick, hearty oats flaked with cinnamon, brown sugar and of course, butter :). Delicious. You will love the simplicity of this peach crisp recipe.
