I never thought I would like an eggplant lasagna as much as I enjoy “real deal” lasagna that is made with traditional lasagna noodles. But I do. I never thought anything could compare to my beloved fried Eggplant Parmesan. But this recipe does. I was surprised at how much I enjoyed this rustic eggplant lasagna. And equally surprised at how delicious the leftovers were the next day. Dare I say they were even better a day later? And as a bonus, by omitting the pasta and subbing in more vegetables, I didn’t feel so gluttonous indulging in a second (or third) helping!
This eggplant lasagna recipe is pretty simple to put together – though slicing and baking all those eggplant slices is a bit time consuming. Make sure you have a good playlist ready to go before you start 😉 But if you can get past the initial work of prepping your eggplant, this recipe is definitely worth it. And once those thin slices of eggplant goodness are sliced and baked, it’s as simple as layering your sauce, eggplant, and sausage-cheese mixture until you run out of room in your baking dish. Buy twice the ingredients and make a second batch to go into your freezer. This recipe freezes well, and it will bake up beautifully on a night when you don’t have the time or energy to make dinner but are craving a nourishing, home-cooked meal.
