We love tacos. Who doesn’t? I love their versatility. Regardless of how you fill them – chicken, ground meat, shrimp, beans, eggs, even roasted cauliflower – they are amazing. You can eat them for breakfast, lunch, dinner or even a snack. They are fairly simple to make. And my kids will eat them. Win, win, win! 🙂 Needless to say, we eat a lot of tacos at home.
I love a good steak – but I rarely cook steak at home. Flank steak, however, is a different story. It’s not a fancy cut of meat, but it sure is flavorful. A simple cut of meat for some mid-week tacos. Since flank steak can be tough, it is essential to marinate your meat for a bit prior to cooking it. Though I must admit that I fell short on time when I made this recipe and only let it marinate for an hour or so prior to cooking – but it still turned out delicious. 🙂
This recipe is pretty straightforward, and relies on a lot of the seasonings I typically turn to when I’m cooking Mexican. Smoked paprika, cumin, chili powder and red pepper flakes. I threw in some chopped onions and jalapenos as well to add a little textural variety. You don’t want a dull taco! Simply marinate your meat for a bit, sear it in a skillet, and throw it into your slow cooker along with the rest of your ingredients. That’s it. When the meat is cooked to your liking, shred it with two forks and serve it up in some soft flour or corn tortillas. If you have an array of toppings available (salsas, cheese, guacamole, extra veggies), let your family make their own tacos. This is a game changer for my kids – if they have a hand in making their meal, they are more likely to eat it 🙂
This is a quick recipe for a busy weeknight – just marinate your meat overnight and let it cook in your slow cooker during the day. And this slow cooker flank steak doesn’t turn to mush like other slow cooker recipes tend to do. The meat is flavorful, tender and has great texture. I hope you enjoy!
